

One World Grilled Chicken Salad

Ingredients

- 2 boneless skinless chicken breasts
- 2 tablespoons Marley Kitchen One World blend
- zest from one lemon
- 2 tablespoons olive oil
- 2 cups fresh spring greens
- 1/4 cup cucumber, sliced
- 1 carrot, sliced into coins
- 1/2 cup red bell pepper, chopped
- 1/8 cup radish, sliced
Dressing
- 2 tablespoons olive oil
- 2 tablespoons red wine vinegar
- 1 teaspoon Marley Kitchen One World blend
Instructions
- In a small bowl, whisk together olive oil, lemon zest, and One World blend.
- Place chicken breasts into a large resealable plastic bag or shallow dish. Pour marinade over chicken. Marinate in the refrigerator for a minimum of 1 hour, or up to 8 hours.
- Heat an outdoor grill over medium-high heat, about 400 degrees. Oiling grill grates will help chicken keep from sticking. Grill chicken for 5 to 7 minutes per side, or until internal temperature reaches 165 degrees.
- While the chicken is cooking, make the simple dressing. In a small bowl whisk together olive oil, red wine vinegar and One World blend. Set aside for finishing.
- Remove from the grill and let rest 5 minutes before slicing and serving atop a simple salad of vegetables and greens. Drizzle liberally with One World dressing for added kick!
